There are so many bloggers out there, or so Ang and I are finding out!  I have been following this blogger for quite awhile now.  When my husband and I started out on our paleo quest a few years ago we found her wonderful cookbook that has the VERY BEST paleo chocolate chip cookies I have ever had.  I’ve been a follower ever since.  She has a crazy story about her health and how finding the right foods healed her body.  She gave me hope that as a food allergy sufferer I could eat things that tasted amazing and were in my “healthy zone”.  My husband and I followed her posts as she sadly lost a baby last year as well.  She’s an amazing woman who continues to be an inspiration in so many ways.   She came out with another book last year and I use it just as much as the first.  Go check her out and be inspired to eat and and cook healthier for you and your family.  Thanks Danielle Walker, keep on doing what you do! My Favorite New Kitchen Item

I have something new that I am totally in love with.  I didn’t even know how much my cooking life was missing out on until now.  How have I been cooking all these years without it?  Introducing the new love of my kitchen. But shhh, I don’t want my coffee maker to hear, get jealous and quit working.  Just like on bike rides, when Amy and I talk about getting a dreamy new bike, we do it quietly in fear of them retaliating !

Here she is …. The lovely, the beautiful, the shiny (insert Vanna White hands here)….Le Creuset stovetop grill!

Do you see how pretty she is?  I love how the color goes from orange to red, which gets even darker when it heats up.  Maybe you can tell I am a bit obsessed because of all the photos of her glossy coat?  But she is not all beauty , she is a hard worker too.  I crank her up to medium and let her heat up at least 4-5 minutes.  I test it by flicking water droplets on it to make sure she’s ready to work her magic. Chicken and steak have been our favorites, salmon pulls a close second.

imageThis was so easy,  I just put a little olive oil on the chicken and seasoned with a little of my favorite seasonings.  In this case it was some Saudi Kasaba Masala, a curry blend from a trip to Dubai. But DO NOT, I REPEAT DO NOT add oil to your pan.  This little cast iron, 9.2 pound beauty is already to go without your help!  Doesn’t she do a great job at making pretty little grill marks?  Now can you see why I love her so?  That chicken was so tasty that it’s become a staple at our house.  When I’m in a hurry, I slice the breasts horizontally, to make them cook quicker.

I got my pretty little gem at Williams-Sonoma.  Go check them out they have 5 colors and two sizes.  I promise you, they won’t disappoint!


This is a pic of my little collection, all are in the color FLAME.  But the color choices are so beautiful!  I’m thinking of stepping out of the box and starting a new color with my next piece.

My Favorite New Lunch

Like many of you, I am often on the go and don’t have time to prepare lunch.  So some days I’ll grab an apple and slice of turkey to eat on the run.  But a few days ago, after my later than normal workout, I was famished when I got home.  So I made my favorite new lunch that takes just a little prep.  Here are the ingredients I used….

Skipjack tuna (yes, any tuna will do, this skipjack thing is something I need to read up on), or chicken if you don’t like tuna, one large avacado, apple, celery and some sweet peppers.

Mash your avacado, yes the whole thing.


Dice 1/4 apple. two green onions, one stalk of celery


Then add diced veg and drained tuna to the mashed avacado.


Season with salt and pepper to your liking.  Then halve and seed sweet bell peppers.  Fill with tuna salad.


There you have it.  Quick and easy lunch that is really going to fill you up.  I was surprised how many little peppers I filled. ( much more than shown)

St. Patty’s Day Dinner

When I was a kid my family had some pretty cool traditions.  I think my mom and her BFF would just sit around thinking up ideas to get our families together. Mostly so we could all learn to love each other as much as they did.  My mom and her BFF met at church when my brother and I were young, I think I was in first grade.  BFF had two kids also, each a year older than my brother and I and the same sex….how convienent is that?  Neither of them had a sister and they just clicked. So they became family.  My mom lost her life to cancer at forty, when I was 17 years old.  It was way too soon, I wasn’t done with her yet.  She needed to see me graduate from high school, marry and have a family. She needed to be a grandma to my kids. But it didn’t work out that way.  God’s plan was different.  But my mom gave me so many memories in those 17 years.  One of them St. Patty’s day green dinner, part of her legacy that carries on.  She was a pretty fun mom.  So this year Ang’s family and mine had green dinner.

Ang does such a great job at chalkboarding, I hope to learn a thing or two from her!!!!

Corned beef isn’t the healthiest meal by far.  Its full of nitrates and phosphates and all kinds of garbage we don’t need!  I could have done some research and made my own but got this one all ready to go from the grocery store.  It’s so easy, just plop in the crockpot, add water and cook on low for 8 hours.


It doesn’t look so pretty here but turns out delish!

We made almost everything green.  Green wine, green milk, green shamrock dinner rolls with green butter and  green twice baked potatoes.


Yes, it’s a whole lot of green but it was fun!

Angie made a grasshopper dessert that had Girl Scout thin mint cookies as the crust.  I thought I had died and went to heaven, I’m pretty sure angels were singing !

We did save our kids from one part of the tradition.  While moms were getting dinner ready, they had us kids conjure up some sort of entertainment for after dinner.  We would sing a song, read a poem, play a song on the piano, do whatever.  I think it was still apart of the master plan for all of us to love each other.  Or to embarrass us in front of our boyfriends in the later years. The end result?  It worked, I still love them like family.  Our moms were smart after all.



Say what ? Butter coffee?

About a year and a half ago my husband started talking all about butter coffee or BulletProof coffee as it’s also known.  I turned my nose up and smirked, “Ew, that sounds gross! Butter in your coffee?” He smiled and sat very content with his butter coffee.  Making it every morning he would rave about how good it was. Until finally one day when he wasn’t looking I took a sip.  Mmmm…what was this creamy goodness that I had been snubbing?  It was like no coffee I’ve ever had!  So now I’m addicted.  Yes I know, it sounds crazy and super fattening.  But the whole idea is essentially , you are waking your body up to say ” Oh ya, we are using fat as a fuel source.”  Or for a more detailed version visit Dave Asprey at  But her is my version of butter coffee .

Here are your ingredients….



Grassfed ghee (or Kerrygold butter) , organic coffee, collagen peptides and MCT oil or coconut oil.

Why all this stuff you ask?  Grassfed butter is what makes this so yummy, duh. It’s butter.  Of it does.  Organic coffee , obiously is the “cleanest” choice.  Collagen , it’s the building block of nails, skin, hair, bones and joints.  Ya like gelatin, be grossed out if you must.  But my recovery time post workout almost seems improved because my joints aren’t achy anymore.  The MCT or coconut oil promotes high energy, fat loss and brain function.  Uh huh, you heard me brain function

Step one: BREW YOUR COFFEE!  Add about 12 ounces to a blender or I just use a glass quart jar.


Then add one Tbsp each, grassfed butter, MCT or coconut oil (I love the coconut flavor) and Collagen, if you choose, sometimes I add a dash of cinnamon too.  Then I blend it with an immersion blender.  Whip it and whip it good!!!!  Prepare your taste buds for something new, they are gonna freak!


You can also make a mocha by adding one Tbsp. Unsweetened cocoa powder, one tsp or more pure maple syrup or honey.  This is soooo good!

Then find your favorite mug….
