Yum Quinoa! Yes , it is a grain, no it’s not paleo. But it’s a great source of protein and carbs especially if you need some good fuel for endurance, like a bike ride. My friend Amy and I did our annual Mother’s Day ride on Sunday. So Saturday was prep day. We had to get our bikes ready to go and pack up the food we wanted for our picnic. Our sweet family packs it up in the car and meets us for lunch where we make little piggies of ourselves. I knew I would be eating some treats and wanted to make sure we had some good fuel for our ride as well. Because eating Oreos for lunch isn’t a good idea even if it does sound good!
This recipe is really easy is chock full of healthy stuff.
1 cup chicken broth
1 cup of water
Bring to a boil. Add 1 cup of rinsed quinoa. Turn down to simmer and cover, cook 15-20 minutes until all liquid is absorbed.
Chop the following:
1 orange or red bell pepper, 4 green onions, 1/4 cup kalamata olives, 1/4 cup parsley or cilantro, 1 cup diced tomato.
When quinoa cools mix in with vegis and add 3 Tbsp. olive oil , 2 Tbsp. red wine vinegar, squeeze of lemon, salt and pepper to taste.
It would also be good with some feta cheese , chopped chicken or on top of greens. Go on , use your imagination!
Mix it all up well and refrigerate. It really is best once the flavors have had some time to meld together.
